The general consensus that I've seen here is
- a NAS OS is redundant and hampers efforts to repair things.
- You're better off using something like Fedora, CentOS, Ubuntu Server, or your favourite flavour

I've tried FreeNAS in Hyper-V, Vanilla KVM and Proxmox. But I mainly did because I was curious about it.

@DustinB3403 I've had job offers from Competitors , but I dont want to be in Restaurant support industry if I change jobs..
plus - they're pretty flexible with my Kids schedule and allow me a little freedom when it comes to my kid and what I need to do for him.. -

I have a few big things I need to do to make sure these guys are taken care of when I do leave, But I'm working on all of that.

I see what you're saying, I just need to figure out what's my next step.Why do you need to take care of "these guys" are they family, really close friends or are they a paycheck?
