You have the ribs cooking,.. I just started some cheese in the smoker and have part of a loin in for Canadian Bacon....

I've never smoked cheese. How long do you normally let it smoke for?

Trick with smoking cheese is cold smoke.. you don't want to let the cheese it to warm or it will slump into a mess...
Generally about 40-60 minutes ish..

Really depends on the cheese. These processes vary dramatically.

Yeah I have no way of making cold smoke...
LOL.. you might be truly surprised... I have the grate from my little smoker in a cardboard box over the smoker..
Oh - Forgot to mention.. looking up info for making smoked summer sausage also.
