          @scottalanmiller It's only because I was getting hungry and came up to cook some ribs...

          That and my eyes were getting tired playing D3.

              You have the ribs cooking,.. I just started some cheese in the smoker and have part of a loin in for Canadian Bacon....

                  Trick with smoking cheese is cold smoke.. you don't want to let the cheese it to warm or it will slump into a mess...

                  Generally about 40-60 minutes ish..

                    Really depends on the cheese. These processes vary dramatically.

                          LOL.. you might be truly surprised... I have the grate from my little smoker in a cardboard box over the smoker..

                          Oh - Forgot to mention.. looking up info for making smoked summer sausage also.
