Smoke a whole turkey. Brine it, then rub it, smoke over cherry/pecan/maple wood for 7-8 hours.

Get corn tortillas, veg broth, queso fresco, salsa Verde, and cheddar cheese. Season the meat with broth, salsa Verde, cumin, garlic, then add queso fresco.

Assemble the enchiladas:. Put a bit of sauce in a large baking dish, then roll meat mixture in corn tortillas and place in dish seam side down. Repeat until dish is full, packed in tight. Add the rest of the sauce on top, add lots of shredded cheddar on top, bake 375F for 30 min
Yes, make your own enchilada sauce, it takes 10 min and uses standard ingredients that any well stocked kitchen will have.
