Ideally you want enough RAM to hold the database and any temporary or cache tables in RAM without having to touch the disk. More than that, and it is just wasted.

Wow. This is not your problem at all. Sounds like you have already documented. If they don't want to put a transition plan in place, that is out of your hands. You always have the right to quit, giving notice is great and socially accepted and probably best to do, but even that is purely voluntary. And that's really only for leaving when it is something like retirement or taking a new job. If you had a family emergency or whatever, you don't even have any expectation (or potential) for that.

That's pretty scary. Makes an argument for just hanging up and not messing with them. This takes it far beyond scamming. This is now threatening and extortion.

There is only one price. I don't think that Apple does any extra markup on the drives after the fact. They are the same price up front or later. So no extortion pricing, it's all level pricing. That's one of the Apple advantages. Sure, you have a higher price starting point, but you get all price transparency and the majority of the price pain up front. There are no surprises and later price jacks once people are locked in, even though they are locked in.

Wow, that is a very large decrease and very soon after it was rolled out and touted. They don't appear to have given it very long to have had a chance to really be tested.
