Their MAIN product. Go to their website or their stores and the primary product that they promote is their 100% veggie Beyond Famous Star with Cheese.
I'd never been to one, but checked their website recently and they were ALL about the veggie burgers.
-
It's new, but they are promoting it as if it was their bread and butter. And I think that it is, it seems like they've decided that that is where they are focused. It's insanely good.

Went to Qdoba today - Tried Impossible on 3 cheese nachos.. pretty good.
So, is the move to plant based proteins happening because it's more cost effective? more environmentally friendly? etc?

The new "fool meat eaters" stuff is for environmental friendliness and meeting the needs of vegetarians. It's anything but cost effective. it's a massive price premium over meat.
Traditional vegetarian options are cheaper, but that's not what people are excited about now.

It's just recently that Impossible and Beyond got funding to make things that "seem like meat" to a lot of people. And in doing so, somehow convinced some big chains to stop eschewing vegetarians. It's more of a cultural shift than anything. Impossible and Beyond made it "cool" to feed vegetarians where before restaurants seemed to prefer losing money over keeping us as clients.

And if they are lucky, this will bring enough scale to drive down production costs.

That's the hope. Both are ramping up to such a degree that once the suppliers are ready and the factories are running, it probably will. The demand is just crazy right now.
