It's not bad. I think I'll get tired of it after a while though. But it's fun to build the stuff and see what other people have built. I really wanted SimplePlanes, but it won't run on Linux.

Subnautica is built on the Unity engine, so it's essentially just recompiling. Supposedly they said they are going to release one when it's completely done.

I use Windows because I play a lot of really old games from before Linux was a viable gaming platform.

Yeah, Unity supports Linux. It's just laziness it would seem if Subnautica isn't available on it. that's the whole point of Unity!

Just finished a session of Elite Dangerous. I don't have the latest expansion pack yet, going to have to make a decision on weather paying for a lifetime is worth it, or just shell out for Horizons?

It's rather complex to collect payment from Australia and then pay back to Australia. Doable, of course, but adds a bit of complexity as you have to look into dealing with Australian taxes and such. In some countries this is easy, in some it is practically impossible.
