Special request from my homey for his birthday: Brining some wild caught sockeye salmon with maple, brown sugar, and red chili flakes. 2-3 hours tomorrow on some cherry wood smoke, basting with maple syrup until it's candy/jerky.

Or it's Texas and it's so hot that yo uhave to cook outside as the AC can't keep up if you cook inside

Sounds about right. Im miserable here. I used to play tennis 6 hours a day in this when I was younger. Cant imagine doing that now.
