We have had production ownCloud running for a few months and havent had any issues.

It's early, but seems to be the case. ownCloud was doing great, but had some issues with the latest (9th) generation of releases. Why they were having issues was clear when NextCloud split from them and started a new product with the forked code base and original developers (which kind of makes ownCloud the dead fork of NextCloud ideologically speaking) and now NextCloud is a full release past ownCloud. It's getting tons of features and work that OC lost even before the split. They are still rough around the edges, so the final verdict isn't in yet, but it's looking like NC is the future.

Also will my theme modifications stay if I migrate?

Support is the reason to go with NextCloud. Unsure about theme.
Support and product development. ownCloud is the OpenOffice of the space. It seemed reasonable to stay with them, but as LibreOffice diverged more and more, OpenOffice fell into obscurity and using it was pointless. The earlier you switch, likely the easier it will be.

Not yet. I plan to do a migration this weekend though. I had to get all my ownCloud systems up to current first. That is done now.

cool. My owncloud server is pretty new so it might be worth migrating.
I did alot of CSS editing and image editing so I am hoping I can copy the images and theme over.

Instead of doing an upgrade, I decided to do a migration. I spun up a nextcloud instance next to my owncloud instance and migrated everything over.
I was able to migrate all my images and CSS edits easily. I only had to make a few minor tweaks as some of the formatting and colors are slightly different.

I did not have time this weekend to do the upgrade, because windows updates went south at a client.
Well technically, updates were fine, but when I upgraded hyper-v integration services that went south.

No they were forked, the main dev team from Owncloud forked the code and make NextCloud. Owncloud is essentially OpenOffice where as LibreOffice is the successor.

I have tried both owncloud and nextcloud but one or the other issue always came up. Switched to FileCloud recently and things have been pretty smooth since then. They have a detailed comparison for owncloud vs nextcloud and what features they have. Their USP is their customer support which never disappoints.
Not open source. Not free. Not even in the game. Also, while vendors are allowed to participate freely here, marketing agencies posting on behalf of vendors to try to mislead people are NOT allowed. This alone is a great reason to avoid FileCloud. Doesn't sound like a very honest way to do business.
