Top thing that I'm seeing, WiFi is not working reliably. Need an alternative for that or something. It's pretty rough.

I have an idea on that. Even if I have to custom wire it, ... I think it could be useful. Could even do our own WiFi if we have a jack we can find in the conference room to connect to.

Unlikely that they will provide a jack.
A solid LTE modem could be connected to an ERL and a coupe UAP for very little outlay. But really any hotel claiming to host a group should be able to provide a dedicated SSID and bandwidth. Hospitality is so crappy compared to what they could do with a little forethought.
