The Amish / Mennonite communities would likely even want to move in with the IT folk. A good mixture of brains and muscle - farm know-how would make for a great match.
Interesting assumption... that in the face of a zombie apocalypse that the Amish would abandon their religion and embrace the fundamental opposite. Valid, but an interesting route to go down.
They wouldn't have to abandon their religion, but which is more important? religion or life? I'm certain sacrifices would be made.
"Living with technology" no matter how old / new it is would likely be one that is made quickly.
If you're planning on letting any religious types in, I'm out. I'll take my chances in the wild vs. being cooped up with anyone religious. Or we should eat the mennonites and amish.

This is where you barter with Mennonite and Amish areas. You kill zombies in exchange for food/seeds, and training if you don't have it. They will need protection as many of them will not know or be willing to do much to protect themselves. And the Mennonites at least would be thrilled to teach.
This would be assuming that they don't get wiped out before we can get to them.
But this is more likely that they are alive and well. The region is so dispersed that there would certainly have to be a large group alive somewhere.

You missed a strategy for food.
Good point, but it's really simple.
We'd use modern Hydroponics where we grow food using LED water troughs. Like here
Takes time, a lot of time. Long term it might work if you really know what you are doing and have agricultural engineers with you.
Hydroponic is a super easy way to grow if you have electricity and proper liquid nutrients.
you can do it without electricity pretty easily. you can substitute fish / aquaculture for the nutrient liquids if you really, really know what you are doing.
But yeah, access to the manufactured chemicals would be the killer. That would be harder to obtain than just normal food in that situation.
FYI... grew up on a farm, family has been farmers since before coming to the new world in 1635. I've visited and studied both of the NASA research hydroponic facilities, toured commercial hydroponics, done some study of hydroponics at Cornell (not as a student) and have read every major textbook on them on the market
Wished I had known this almost 10 years ago.. I had looked at changing from IT to Aquaponics for a career...

Not to mention the countless farms in almost every region.
Farms would be picked clean in no time and very dangerous. Walmarts would be empty on day one.
Any type of Stash, Cache, Store would be a major target. What you have something? You seem well fed,... And even clean... Target.

Yup,.. I can think of a good place to 'set up' but you will need a good big of energy to run it. Here in Kentucky there is a massive amount of underground area which could be used. Just take a look at this area in the Louisville area:

I agree, because people, particular panic'd people cause far more harm then good.
And in a zombie ridden world, everything that isn't a zombie (and what zombies eat) would be people. therefore everyone would be a target. But still physical objects are never targets.

The modern user (think someone use lives off of SnapChat) are rather worthless IMO.
But we already established, right, that farming and construction would be useless because you'd be dead before you could leverage that knowledge. How much use is farming when you can't defend a farm?

The Mennonites / Amish would be the user base, the group of people we'd need the experience of to build strong structures or to maintain a farm of any sort.
If we are thinking in IT terms, users would just get us all killed. Gotta leave the users.
I would think the snowflake users would be the exception to this rule. The modern user (who has no clue) would be the ones to leave.
Why are modern users the ones without a clue? In your scenario, it is the Amish that would know nothing of hydroponics, for example.
The Amish are capable / knowledgeable about farming / construction in general.
The modern user (think someone use lives off of SnapChat) are rather worthless IMO.
But we already established, right, that farming and construction would be useless because you'd be dead before you could leverage that knowledge. How much use is farming when you can't defend a farm?
But @scottalanmiller you're assuming that we'd be using a "common" sun fed farm. Rather than a cave type farm, or modern hydroponics type of farm.

Many regions are very thinly spread out. So the chance of there being a huge zombie number in these regions would be low.
The Amish / Mennonite communities would likely even want to move in with the IT folk. A good mixture of brains and muscle - farm know-how would make for a great match.
Interesting assumption... that in the face of a zombie apocalypse that the Amish would abandon their religion and embrace the fundamental opposite. Valid, but an interesting route to go down.
They wouldn't have to abandon their religion, but which is more important? religion or life? I'm certain sacrifices would be made.
"Living with technology" no matter how old / new it is would likely be one that is made quickly.

No, I'm assuming that the Amish only know what they know and don't know the things that they explicitly don't know like what you describe. I've already explained any the Amish are only knowledgeable about traditional farms.

A traditional farm or modern farm has the same essential requirements. Food / water / Sunlight (of some kind).
Amish for example I'm sure know more than just farming, but construction as well. So you'd just cut the entire group because they only know about traditional farms?
