Ubuntu is such a PITA. I can and do use it, but only where Debian will not suffice instead.
I also prefer Fedora Server.
I prefer Fedora to be sure. But have had great luck with all my Ubuntu machines. Especially with 19.04 they've really come into their own.

What’s your opinion on using netplan to configure networking when using ubuntu?

But...at least you only normally have to configure your NIC once..
