Linux Practice

Alright, so I'm not great with GUI honestly; it takes me a long time to find the right windows. I prefer to lounge around the command line. Anyways, I'm more at the hobby level right now, but want to hone my skills and really start branching out of my comfort zone. I have a few VPS hosting websites and such, but really want to get in deeper.
Other than trying to take on bigger/technical projects in my off hours (I mean really, nobody needs help after 5pm), is there any kind of work I can do in VM's and such to gain semi-real-world experience beyond basic one-trick-pony LAMP servers?

EDIT: The ticket system is a really good one and can help me check on my progress, I like that a lot. I'm not sure I'd get much use out of a wiki but the process would be work checking out for sure! Thanks @scottalanmiller

I'm surprised how much I use a wiki. Tracking bills, home repairs, car stuff, etc.

@scottalanmiller Interesting, maybe it will be one of those things that catches on; I could use some better organization tailored to my needs.

Once we built it, we started using it and you get into the habit and it just gets easier and easier.
