Stumbled upon using the Pi Zero as a 'dongle'. You can still SSH to it, but also VNC to it via the USB port. Pretty simple and less to carry around.

Hrm, DIY USB Rubber Ducky anyone? (USB devices can be so very evil!)

Basically a 3D printed case and (have to guess here, I'm not a USB expert. Just guessing from dwc2 kernel module being used) a USB OTG port including ethernet support to get internet access from the host.

I like the overall result, but it's not exactly black magic.

Yep. I wonder if the standard size USB port is soldered on the board or wired in and attached to the plastic piece?

I'm doing some homeoffice from Wendnesday to Friday at the moment, but I could take a look at a Pi Zero when I'm back in my office next week. I don't think it's possible to solder it to the PCB, so it must be glued to the case somehow.

Of the three videos of the 'same ' project, they all soldered wires to GPIO and Power pins on the bottom, and then used electrical tape to insulate the USB metal housing from the board.

I expected that someone could 3d print a bottom cover / USB housing...
