I have used Zentyal and had a great interest in watching over the community and seeing how it was progressing, but I did notice the community is pretty dead.

I know a CentOs is highly recommended for server stuff but I personally use the Ubuntu server edition and am happy with it, I do prefer Debian based distro's though.

your probably find a lot of customers would like Cpanel as well, and if you then go on to reselling then you would need WHM and cpanel.

Great post, I used this method about a month ago to create an offline install as well, was a lot quicker then keep downloading directly from 365, especially if you have not got a quick connection and install office regularly on users machines. When you first run office it ask for an activation key and under the input box is a link saying activate using an email address, you then just enter a 365 email address which has the relevant licence attached.

Few ubuntu servers and a windows server 2012R2 template.
All setup on some funky old chest of drawers lol. -
