The most simple place to start is with just system documentation. How things are setup, what OS, what hypervisor, what specs and explain why 1vCPU and 1GB ram is the standard practice for VM creation (it doesn't waste resources) and it's easy to increase, but difficult to decrease.

Last night me , my boss, and another tech were troubleshooting an issue where odd number terminals talked, and even number terminals talked but did not talk all the way through the system.
I'm beyond lost cause everything is set up correctly, can connect to everything through our Command Center but it's still not up.

That seems like a bad approach, since any given department could be forced to stop work "because they overran their paper budget".
Usually, they use the code and pin to know where they are using color but otherwise default is to allow b&w to print without a code.
How does the printer know the difference? Black is a color. .

Just considering the thought for a bit.
Positions that are highly respected positions such as doctors or professors cost a ton of time and money to earn, causing a ton of debt.
And in these same positions, we have people who are literally charging way more money for a basic service. Because they need to pay off their personal debt.
Which if it didn't cost so much money to become a doctor (not talking about reducing education efficiency or studies, just financial cost) than doctors wouldn't be forced to charge so much for the same basic services (which ultimately result in insurance payments) because the customer simply couldn't afford to pay for the service at those inflated rates.

Consumers are screwed as soon as they choose to purchase any product, be it phones or computers or cars or food.
You're paying a premium to buy the product, from where-ever you chose. Competition for Mitel is the Open source community.
The hardware hardly has any way to not work on appliances like FreePBX.

This could also be done with a Tablet and some software on that tablet. In this case though you'd need a bluetooth keyboard and mouse.
All of the printers, scanners, network shares, etc etc would all be hosted from the VDI environment that the client logs into.

If there was a robust package I could use to get agentless and CBT and file level restore on KVM, I will buy it, if it is reasonable.
There was a thread on the other site about Unitrends having agentless on it sometime this year. Ill have to see if I can find it.
But I cannot even install Unitrends on Hyper-V server.............

I imagine you could use SW for this. Create a form with the necessary fields on the SW portal that would create a certain kind of ticket that would log the maintenance that you do on a device. Then just close it when either you are done or you return the equipment to the professor.
