Can you connect it to your own Collabora server/install? (The first page at the website doesn't say much other than download a container and add it in NextCloud.)

Docker just does not work on CentOS, as I found out the hard way.
So I guess it's up to a sysadmin to get Collabora setup for themselves. uck.

I'm not 100% convinced it's not an artifact of the ramnode OpenVZ network mess yet. I'm going to start working on a Digital Ocean instance tonight.

I think that the fix is ... Fedora.
