Once you understand how the engine works it gets easier. But I only ever made it to the Mun couldn't get much further then that.
I probably didn't give it enough of a chance. I watched a video where a guy was building a space station. He got a piece of it up and attached and said "that only took 45 minutes"

Yep... I spent a good 4 hours trying to get a rocket and satellite up to the Mun... then I watched some youtubers do it in 10 minutes.
One of the best things that was introduced is the Career mode. Where you have to unlock parts by doing "Science!" it adds a really fun dynamic to the game while trying to teach the player how to actually play.

Uck. I could design the perfect rocket that could get a crew to Mun and back, and my flying would doom them every time.

There are a few mods that make it a lot easier. MechJeb is the big one. They also recently introduced a Scriptable Autopilot mod. Which uses LUA scripts to do the controls.

I got my Oculus Rift DK2 back from Grey and started playing Eve: Valkyrie with it. It's pretty amazing even on the developer kit. Any other Eve: Valkyrie players? It would be nice to be able to play with people I know rather than randos

EVE is spreadsheets the game. I've played a bit of Elite Dangerous and have found it to be extremely fun without much of the monotony. I'm hoping that they keep expanding it to include better/more missions in the future.

Spreadsheets the game, I'll have to remember that one! I like Elite Dangerous as well. I've been spreading my playtime between Elite, Minecraft, World of Tanks, World of Warships, Steel Ocean, and oogling the new features of Star Citizen as they come out.

Uhm, yeah.... I kinda bought a base Freelancer, a Freelancer LN, 315P, and a Freelancer Max.... I kinda went crazy when I found out Chris Roberts was doing a modern game.

Yeah I think Elite launched their own arena version, since the main game can suffer from being a bit boring with too much space in between the fun and exciting parts:
