It may just end up being a Bluetooth speaker in my kitchen but I am hoping it will be useful to me at least somewhat.

Yeah, now that is something that just won't be of any use to me, or at least so far hasn't been.
I was given a a Beats Pill BT speaker last year. I've used it all of once. -
we only have one Bluetooth speaker in the house and we fight over it. So another one will be nice if nothing else.

We use BlueTooth speakers quite often. And with it able to stream music and other audio material on its own without a device attached it will be that much better. I anticipate using it as a computer while in bed in the dark. I'm hoping that it handles Audible well.

These types of devices scare me a little. at least it's made by amazon rather than a data mining company like google.

That's why I am comfortable with it. Google doesn't worry me much, but Amazon very little.

So far:
Works great as a Bluetooth speaker. The voice recognition is really very good for all 3 of us here. Love the to do and shopping list features. The reminder/alarm feature will be handy for me. The remote allows me to have the Echo in another room and just use the remote to activate it (ok I will revise that I am going to smack @Mike-Ralston he has the remote somewhere in the house with him). -
How does the remote work? Can you talk into it?

Yes there is a microphone button you have to manually press on it to activate it.

So you talk into it and it talks back to you?

The microphone doesn't no. Alexa does (can't change the name as of yet hopefully you will be able to with firmware updates at some point).

So it needs to shout from the other room?

LOL well my son (fun guy that he is) stole the remote and keeps turning Alexa (echo) on an off next to me. I don't hear it saying anything unless he asks it a question. I don't think you would really use the remote for more than turning it on and off or adding to a shopping list.
