Exactly, it's a rare feature to use, but much appreciated when it is needed.

Does Google's option allow for no authentication before the other person is editing it at the same time as you?

Ah, true. But not to the same domain.
I correct myself this was modified, if you set the whole file to anyone with the link can edit you don't have to have a Google account, and edits are marked as created by anonymous.
So it is apparently possible in google

Ah, thanks, I didn't know it was possible in G'docs. Well I guess they feel the pressure from the competition from MS so they're lowering the bar rather than forcing people to sign up to an account...

Does this mean that when your done having the anonymous person make edits that you have to remember after the fact to go back and remove Anonymous access to ensure that somebody is not randomly bumping into your link and then editing your files?

Yes, expiration dates are only with a GSuite account and setting one removes the edit access for the people or group.

I thought we were talking about business cases here? Granted NC can be used for free.
