Methinks the discrepancy between
systemctland the Zabbix gui is caused by me changing host from localhost to the actual hostname of the server during step 4. -
Plenty of fun with the family already. Wifey's folks got here day early, and we went to hang out with some friends last night. Today was down to my folks. Tomorrow, my folks are coming up here, and we'll go from there. Gotta love the holidays!

Looks like my hunch was wrong, but I did fix one problem (incorrect database username). Now hunting down the next error I see in the zabbix log files.

Problem was with selinux, which was solved by running the commands mentioned in Jared's how-to thread again.
I still see this when running
sealert -a /var/log/audit/audit.log | grep zabbix.**** Invalid AVC allowed in current policy *** type=AVC msg=audit(1513571214.837:182): avc: denied { create } for pid=2221 comm="zabbix_server" name="zabbix_server_preprocessing.sock" scontext=system_u:system_r:zabbix_t:s0 tcontext=system_u:object_r:zabbix_var_run_t:s0 tclass=sock_fileDespite this, the zabbix GUI shows that the server is running now.

)LOL - yeah, I still need to kill the VLAN we have because of the vendor and my lack of knowledge when the VOIP system was put in place. Unfortunately, if there are any hickups.. my boss will blame me.

I tend to decline pretty fast. I was losing my mind by the end.
