Skip 192.168.1.1 please.
Most home networks use that, so IP address conflicts with VPNs tend to happen.
Great Recommendation.
Forget 192.168.1.0,192.168.1.1, 192.168.2.1
You can use 192.168.200.1 192.168.201.1....

Yes, each office will have their own dedicated switch. Based on this, is the ER8 a good shout?
Yes, if you are wiring each one to its own hardware, then Pro 8 will do that very well.

Correct. WIth dedicated switching to be behind it, then the ER8 is an awesome choice.

Can the ER8 do load balancing so I can assign each port say 30mb each ? Pressume I can find all the steps/guides online
You can do some load balancing globally, or you can do shaping on each interface.
I highly recommend against setting a 30mb limit per line. that just hurts everyone.
Just set global QoS for things like VoIP and such.
-
I agree with @JaredBusch look at shaping and such before you look at capping. Capping is almost always a very bad idea, everyone loses.
-
Even if the 6 offices are totally independent? We have a 200mb line coming in so is it not fair to allocate each port 32mb each? Or do you think I should just leave it defaulted but prioritise QOS for voip?

Correct.
Does someone have any examples of actual QOS rules for the EdgeRouterX series? I've got the basic "Download = 700kbps, Upload=300kbps" for our connections, but that's it so far.

Since version 1.8 or maybe 1.7 even, they added new a QoS process outside of the original traffic shaping stuff.
fq_codel
is the new standard and is in the GUI. -
